For our game and exotic meats - like elk, bison, wild boar, and alligator - we source from trusted suppliers both in the U.S. and abroad. These cuts go through a strict quality control process. While game meats aren't regulated by the USDA like beef, they are held to FDA standards under the Federal Food, Drug, and Cosmetic Act (FD&C Act) - ensuring they meet stringent food safety guidelines.
